What is hybrid meat?
Hybrid products are an innovative answer to the demand for more sustainable and healthier food without sacrificing taste and texture. But what exactly is hybrid? This is a practice that has existed for years, for example, in the AH Beef burgers. Often this is done for longer shelf life or taste: by replacing a small portion of meat, production costs also drop. Now there are also currently chains actively naming this as hybrid, this we call "HybridWashing." It is presented as sustainable, but the intention is often in favor of the chain such as cost, rather than the collective.
2. 50/50 Products: A nicer variant are the 50/50 products, which evenly combine meat and vegetable ingredients. These products can have a good texture, but sometimes do not stick together well, causing them to fall apart during baking. Also, the original plant based are often still visible, which can put off the meat eater. Still, they are often a healthier choice due to the balance of meat and plant-based ingredients.
3. Hybrid for Sustainability Impact: Another layer of hybrid products is designed to reduce carbon emissions. Sometimes this leads to combinations that make less sense in terms of health, such as chicken with minced beef. Beef mince can generally be eaten red, but chicken absolutely cannot. This creates health risks.
4. Hybrid by Mixing Meat with Dough: For example, Lidl offers hybrid minced meat that is partially made of pea dough. While this is an affordable option, it often contains many additives such as sugar to enhance the taste. This can come at the expense of health.
