What is hybrid meat?
Hybrid products are an innovative answer to the demand for more sustainable and healthier food without compromising on taste and texture. But what exactly is hybrid? Hybrid means combining meat and plant-based ingredients to offer the best of both worlds. At SNX, we believe that one does not have to exclude the other. That is why we have developed our hybrid products, which are partly plant-based and partly meat.
Various Layers of Hybrid Products
1. Small Percentage of Meat Substitution: Some producers opt for a small meat substitution, for example around 10% or 15%. This is a practice that has existed for years, for instance in the AH Beef hamburgers . This is often done for longer shelf life or taste: by replacing a small portion of meat, production costs also decrease. Currently, there are also chains that actively label this as hybrid; we call this “HybridWashing.” It is presented as sustainable, but the intention is often to the benefit of the chain, such as costs, rather than the collective.
2. 50/50 Products: A nicer option is the 50/50 product, which combines meat and plant-based ingredients evenly. These products can have a good structure, but sometimes do not stick together well, causing them to fall apart during cooking. Also, the original plant-based parts are often still visible, which can deter meat eaters. Nevertheless, they are often a healthier choice due to the balance between meat and plant-based ingredients.
3. Hybrids for Sustainability Impact: Another layer of hybrid products has been developed to reduce CO2 emissions. Sometimes this leads to combinations that make less sense in terms of health, such as chicken with ground beef. Ground beef can generally be eaten rare, but chicken absolutely cannot. This creates health risks.
4. Hybrid by Mixing Meat with Dough: For example, Lidl offers hybrid minced meat that consists partly of pea dough. Although this is an affordable option, it often contains many additives such as sugar to improve the taste. This can come at the expense of health.
